Sullivans Cove XO is made with wines from the Huon Valley region. It has been distilled in the same way as Sullivans Cove’s single malt whiskies, and aged in either French or American oak barrels. The first release of Sullivans Cove XO, cask TDB0040, was matured in a 300-litre American oak ex-tawny barrel for nine years. “After years of distilling whisky, the opportunity to work with quality Tasmanian wine was really exciting for us,” said head distiller Patrick Maguire. “We’ve waited a long time to see the results, and we couldn’t be happier with the quality and complexity of these brandies.” The brandy will be released in two different styles – XO Single Cask and XO Double Cask. Only a few hundred bottles of each expression will be available.
